Responsible For: Bar and Lounge Staff, Bar and Lounge Operations,
SUMMARY
Maintain and improve upon the efficient and professional operation and service of all bars, Lounge and storerooms. Maintain and develop the documented standards and procedures to the highest standard. Maximise service quality to all clients; ensuring staff motivation and training.
Accountable for adhering to all Company and Induction policies and procedures
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Guest Service

Ensures service and customer care are maintained to the highest standard. Deal with guests personally and ensure that existing relations are built upon and that the regular clientele of the business is increased.

Maintain and co-ordinate with the Restaurant Manager beverage for functions, restaurant, private dining room and bars.
Financial
-
Accountable for all cash, credit cards and other methods of payment on shift.

Responsible for cashiering reconciliation duties at the end of each shift.

Responsible for documenting and explaining all cashiering variances.

Responsible for the secure collection and return of the float both to and from the cashier.

Responsible for stock take both weekly and monthly

Responsible for stock variances on a weekly basis, to ensure they are proactively analysed,
managed and resolved.

Responsible for liaising with the reservations department to maximise the restaurant, bar and loungeseating capacity.
Staff Management
-
Complete delegated tasks on weekly action plans.

Ensure all staff is trained to the highest standard in all bar areas including general bar knowledge, cocktails, portion control, pouring tests, wine knowledge, menu knowledge, service standards and sequence of service.

Implement staff induction training according to training schedules set by the Restaurant Manager.

Monitor and document staff performance.

Maintain correct personal appearance and hygiene of bar staff employees to the Company Terms and Conditions.

Discuss any problems with Restaurant Manager prior to action being taken.

Ensures bar and lounge staff perform their tasks as directed and as specified in their job descriptions.

Hold monthly meeting with all bar employees ensuring communication, awareness and morale
Purchasing, receiving & stock control

Purchasing and receiving all beverages, glassware and bar related non-food items
-
Follow purchase order system to ensure par levels and availability

Ensure all purchase orders and invoices are passed to Cost Controller for processing

Liaises with Function Manager ensuring all required function beverage is correctly ordered and delivered prior to the function

Undertake the monthly stock take of glassware. Monitor par levels and order as required liaising with Restaurant Manager

Ensure the cleanliness and order of the main beverage store and refrigeration units

Communicate with the Cost Controller regarding all orders or problems with stock and supply

Maintain the security and security systems for all bar areas, stock and supplies
Repairs & maintenance

Monitor repairs and maintenance in the Bars. Lounge and Storerooms

Ensure any R+M items are reported immediately to the Director of Operations
Operation Standards

Ensure the Bars, Lounge and Storeroom areas are fully stocked and equipped for service.

Work closely with Restaurant Manager on stock variances to implement procedural change or policing to attain a better result.

Develop guest relations and handle feedback in a positive manner, ensuring return patronage.

Develop the beverage offer to the highest standards ensuring a creative and quality focus on the cocktail offer and quality.

Control, manage and analyse all bars, lounge and storerooms in relation to the overall operation.

Assist and respond to any change in the Bar, Lounge and Storeroom function as recommended by the Restaurant Manager.

Maintain correct procedures of opening and closing duties of Bars, Lounge and Storeroom areas.

Ensure the table lamps are charged and maintained as per the operating manuals and standards.
BAR MANAGER RESPONSIBILITIES
Responsible to the Restaurant Manager for Bar employees within the establishment. Carries out management responsibilities in accordance with the organisation's policies and applicable laws. Responsibilities include training employees; planning, assigning, directing work and resolving problems.
Responsible to communicate to management team and bar team.
QUALIFICATIONS
The requirements listed below are representative of the knowledge, skill, and/or ability required.
EDUCATION and/or EXPERIENCE
Minimum of 4 years related experience in the hospitality industry and/or equivalent combination of education and experience. Demonstrate ability to work well within a team under pressure.
